8 peeled and chopped potatoes
3 green onions chopped (save green for garnish)
1 minced garlic clove
1 1/2 tbs. course ground pepper
1 tbs. salt
1 quart heavy cream
1 cup grated parmesan cheese
Boil and puree potatoes. Add chopped white part of green
onion, garlic, heavy cream, salt, and pepper. Cook on
low heat for 30 minutes. Add parmesan cheese at the end
of cook time. Set off burner and allow cheese to melt
into soup.
