Angel Hair Pasta with Almonds
1 cup sliced almonds
1 tablespoon unsalted butter
2 tablespoons Extra Virgin Olive Oil
1 bunch sliced green onions
1/2 cup light cream
3 tablespoons creamy peanut butter
1/4 teaspoon white pepper
Salt to taste
1/2 pound angel hair pasta
In a large skillet, lightly brown the almonds in butter,
remove and set them aside. Add the olive oil and
scallions, sauté slightly and add the cream. Blend in
the peanut butter, and add the pepper and salt. Simmer
until the mixture is thickened. Meanwhile, cook the
pasta. Add the browned almonds to the sauce. When the
pasta is done, drain the liquid off and toss with the
sauce and serve.
Serves 4.
