Maple Butternut Squash And Bacon

6 Cups butternut squash peeled and cut into 1/2-inch
pieces.
4 Slices bacon
1/3 Cup maple syrup
1 tsp. fresh lemon juice
Cook bacon until crisp and crumble. Cook squash until
barely tender (in microwave about 10 to 12 minutes in 1
tablespoon water). Add maple syrup and toss to coat
squash. Cook uncovered in microwave 1 to 2 minutes until
squash is tender. Transfer squash with slotted spoon to
serving bowl and keep warm. Microwave liquid remaining
in casserole at High power until thickened slightly.
Pour liquid over squash. Sprinkle bacon, lemon, salt and
pepper to taste. Toss mixture. Serves 6
