Tomatoe Beef Barley Soup
Recipe: Joyce'S
1/2 cup Carrots, diced
1/2 cup Celery, diced
2 medium potatoes, diced
1 large onion, chopped
1 tbsp crushed garlic
6 tbsp Beef base OR 10 bouillon cubes (dissolved in the
water)
6 1/2 oz Pearl barley
3 qt Water
1 tsp Maggi*
1/2 lb Ground beef
1 can diced tomatoes, (28oz)
2 T Butter
Salt and pepper
Sauté all veggies in butter & garlic until tender. In
separate pan, cook beef; drain. Add to veggies. Add
bases, tomatoes, Magi, water and barley; simmer 30
minutes or longer. Season with salt and pepper.
* Maggi is a sauce enhancer. You can use it in gravies,
soups, spaghetti etc.
A substitute for bouquet of Garni.
