Tex-Mex Beef Soup
vegetable cooking spray
1/2lb round steak, cut into 1/2" chunks
1 cup chopped onions
1/2 tsp minced garlic
2 cups water
1-16oz can chopped tomatoes, undrained
1 cup carrots, chopped
1-8oz can red kidney beans, drained
1/2 cup green peppers, chopped
2 tbsp tomatoe paste
1 tbsp chili powder
2 tsp beef bouillon granules
1/4 tsp pepper
Spray a sauce pan with non-sticking spray. Preheat over
high-heat. Add beef, onion & garlic. Cook & stir about 3
minutes till meat is brown.Stir in water, tomatoes,
carrots, beans, green peppers, tomatoe paste, chili
powder, beef granules & pepper. Cover & simmer about 30
minutes or until meat is tender.
