Old Fashioned Cream of Potato Soup


4-6 strips of bacon, diced
1 med. Onion, chopped
2 lg. Potatoes, diced
2 c. milk
salt and pepper to taste
instant mashed potatoes
butter
paprika

In a medium saucepan, fry bacon until crisp. Remove from pan and add onion and potato to drippings. Sauté until onion is just golden; add water to cover and cook until potatoes are tender. Add milk, salt and pepper and heat thoroughly. Add just enough instant mashed potato flakes to thicken. Stir in bacon just before serving. Top each bowl with a dab of butter and a sprinkle of paprika.
