Johnny Cash's Old Iron Pot Family-Style Chili

5 Pounds sirloin steak, chopped Shortening (Teri Jo used 1/2 Tablespoon oil)
3 packages McCormick's Chili Seasoning*
3 to 4 15-ounce cans red kidney beans
3 to 4 16-ounce cans whole tomatoes
Cumin*
Thyme*
Sage leaves
Garlic Powder*
Onion Powder*
Salt to taste
Chopped onions
Chopped chili peppers*
1 4-ounce can tomato paste
2 tbsp Sugar
Chili Powder*
Spice Island Chili con carne seasoning*

*You must guess at the amounts to use -I never measure them.

Brown steak with a little shortening until medium. Add chili seasoning, and cook for 5 minutes. Add beans, tomatoes, spices, onions, chili peppers, sugar, chili powder, and /or chili con carne seasoning. Taste. (If chili is too hot, add 1 to 2 cans tomatoes.) Add tomato paste. If chili seems too thick, add water. Simmer on low for 20 minutes. Serve with soda crackers and soda.
