Shrimp Neptune
1-8oz pkg cream cheese
1/4 cup Parmesan cheese, more or less
1/4 cup Fontina cheese, more or less
2-3 tbsp crushed garlic
1 egg yolk, beaten
2 tbsp chopped chives
butter & lemon wedges
Large shrimp, crab pieces or chunks of lobster, cooked &
drained well.
Cream the egg yolk & cream cheese together. Add the
other cheeses, garlic & chives.
In escargot or shells, place about 3-4 tbsp butter with
a sprinkle of garlic in each & melt in the oven. Making
sure the dish is hot, place the fish in it. Spread the
cheese mixture evenly over the top of the fish. You
don't have to cover the fish totally because the cheese
will melt while cooking. Bake in a 350F oven till cheese
is bubbly & golden brown.
Serve with lemon wedges & a fresh baguette to soak up
the juices at the bottom of the dish.
