Shrimp Gumbo
2 lbs. shrimp, de-veined
1 large chicken, boiled, de-boned and diced
1 lb. smoked sausage, sliced
1 lg. bell pepper, diced
1 lg. onion, diced
1 lg. pkg. okra, cut up
1 lg. can tomatoes, cut up
1 lg. can tomato juice
1 tsp. Creole seasoning (or more to taste)
sugar to taste
Sauté onion and bell pepper in small amount of oil. Set
aside. In a large pot, fry a few pieces of bacon or salt
pork. Remove. Add flour, and stir in the bacon grease
till brown. Add water to make a gravy. Add tomato juice,
a little sugar, Creole seasoning. Mix and simmer 10
minutes. Add diced chicken, sausage, okra, and tomatoes.
Simmer 20-30 minutes. Add shrimp last and simmer 20
minutes more. Serve over rice.
