Crab Cakes
Canned crabmeat is mixed with crushed saltine crackers,
egg, scallions,
mustard and seasoning, formed into small balls and
baked.
1 can lump crab meat
2-3 scallions, diced
1 diced red pepper
2 Tbsp coarse grain Dijon mustard
1 tsp Old Bay seasoning
1 cup crushed saltines (unsalted)
1 egg, beaten
Mix all ingredients together. Shape into small balls,
less than 1-inch in size. Spray Pam on baking sheet.
Place in oven at 350 degrees for 20 min. or until brown
on bottom. Right before serving place in broiler for 3
minutes to brown top.
Notes:
May be baked the night before the party, covered &
chilled, and broiled just before serving.
