Grecian Shrimp


Frozen spinach is seasoned with garlic and layered in a baking dish with large shrimp,

dried tomatoes, Greek olives and feta cheese.

2 Tablespoons olive oil
2 cloves garlic, chopped
2 10-ounce boxes frozen chopped spinach, thawed and well drained
20 large shrimp, peeled and deveined
1/4 cup dried tomatoes packed in oil, drained and chopped
1/4 cup chopped pitted Greek olives (such as Kalamata)
1/2 cup crumbled Feta cheese
6 fresh basil leaves, shredded (optional)
Hot cooked rice (optional)

Preheat oven to 350 degrees. Heat olive oil in a 10-inch skillet over medium heat. Add garlic and sauté about 1 2 minute. Add drained spinach and cook until hot. Remove spinach from skillet and place in a 2-quart baking dish; set aside. Add shrimp to skillet and sauté until shrimp turns pink and is cooked through, about 3 minutes. Remove from heat and set aside. Sprinkle tomatoes, olives and about half of the feta cheese on top of the spinach in the baking dish. Add shrimp on top and the remaining feta. Bake, uncovered, at 350 degrees until hot, about 20 minutes. Remove from oven and sprinkle the fresh basil leaves on top, if desired. Serve immediately.

Notes: This recipe is also excellent served over rice.
