Apricot Shrimp Teriyaki


Shrimp are cooked with onion and bell pepper slices and served in a sauce

 flavored with honey, soy sauce, ginger and canned apricots.

1 (15 ounce) can apricot halves in light syrup, drained, reserving juice
1 Tablespoon cornstarch
2 Tablespoons oil
1 medium onion, thinly sliced
1 red or yellow sweet pepper, thinly sliced
1/2 cup reduced-sodium soy sauce
2 Tablespoons honey
1 1/2 teaspoons ground ginger
3 cloves garlic, finely minced
1 1/2 lbs. medium, raw, cleaned shrimp
Hot cooked rice or soba (buckwheat) noodles

In a small bowl combine reserved apricot syrup and the cornstarch; set aside. In a large skillet heat oil over medium/high heat; saute onion and pepper until crisp/tender, about 6-8 minutes. Meanwhile, in a small bowl mix soy sauce, honey, ginger and garlic; set aside. Add shrimp to skillet and sauté 1-2 minutes. Add soy sauce mixture and the apricot halves; stir cornstarch mixture and pour into skillet. Sauté 3-5 more minutes until sauce thickens. Serve over rice or soba noodles.

Notes:
This is a sweet and tangy shrimp dish that everyone loves. I got the idea from a pineapple and chicken recipe that I really like. I tried it with shrimp and apricots and like it even better!
