Cannelloni Rellenos


1 Package cannelloni shells boil as per directions on box or make crepes

Stuffing
1/8 lb butter
1 small onion (finely chopped)
1 tablespoon parsley (finely chopped)
1/2 lb or 1 cup ground ham
1/2 chicken breast (ground)
1/4 cup tomato sauce
1/4 teaspoon pepper
3 tablespoon grated parmesan cheese

Baking Sauce
1/8 lb or 2oz butter
2 cups milk
4 tablespoon flour
1/2 teas salt
1/4 teas pepper
1-2 egg yolks
2 tablespoon dry white wine

Sauté onion in butter, add parsley, add ham, chicken breast. Add tomato sauce, pepper, and cheese. Cool.

Sauce:
Blend butter with milk ,flour, and pepper cook slowly until mixture thickens, add a little sauce to egg yolks before adding to hot mixture, then cook a few more minutes until thick, after removing from fire add wine.

Stuff boiled cooled shells with cooled stuffing and place in a greased Pyrex dish and pour thickened sauce over. If desired sprinkle with additional parmesan cheese, then bake at 375 for 15-20 minutes until brown.
