Peach Melba Sauce
1 can (15 1/4 ounces) sliced peaches in light syrup,
drained and sliced
1 lemon
1/4 cup seedless raspberry preserves
Vanilla ice cream, pound cake slices or angel food cake
slices (optional)
Slice peaches crosswise in half using Utility Knife.
Zest lemon using Lemon Zester/Scorer. Juice lemon to
measure 1/2 teaspoon juice. In Small Micro-CookerŪ,
combine lemon zest, lemon juice and preserves. Microwave
on HIGH 1 minute or until hot. Serve warm over ice cream
or cake slices, if desired.
