Cheesy Oven Omelet

1 cup chopped broccoli
1/2 cup bell pepper -- chopped
1/4 cup chopped onion
4 ounces shredded Cheddar cheese
6 eggs
1 cup cottage cheese
1/2 cup milk
1/4 cup flour
1/2 teaspoon salt
ground pepper -- to taste
Preheat the oven to 425. Sprinkle the broccoli, red or
green pepper and onion over the bottom of a lightly
greased 7x11 inch baking dish. Top with the cheddar
cheese. Whisk the eggs, cottage cheese and milk in a
large mixing bowl. Whisk in the flour, salt and pepper.
Pour over the vegetable mixture. Bake for 20-25 minutes
or until a knife inserted near the center comes out
clean. Let stand for 5 minutes before serving.
Can add 1 cup chopped cooked ham, crumbled sausage,
shrimp or crab (real or imitation) to the vegetable
mixture if desired.
