Wild Chicken


Serving Size : 8

4 poached chicken breast halves - (4 to 6)
1 1/2 cups Chicken broth/poaching liquid
1 box Uncle Ben's Wild & White rice - cooked as directed
1/2 lb butter (2 sticks)
1/2 cup flour
1 cups sliced fresh mushrooms - sautéed (1 to 2)
1 1/2 cups cream or part cream and part 1/2&1/2
1 jar chopped pimento or 1/2 cup diced red bell pepper
1/2 cup onion - chopped
1 tsp salt
2 tablespoons parsley - minced
1/4 cup slivered almonds

Remove chicken from bones and cut into 1" chunks. Cook onion in butter, add flour to make a roux. Add chicken broth and stir over med heat, add cream and cook until thickened. Combine all but almonds and if made ahead, refrigerate. Bake casserole 350° for 30 minutes with almonds on top.


NOTES :

This one is excellent dinner party fare. Can use a whole chicken and strip the meat from the bones.
