Swiss Steak
serves/makes 6
6 tablespoons flour
2 teaspoons salt
1/4 teaspoon pepper
2 pounds round steak -- 1 inch thick
4 medium onions
6 tablespoons shortening
1/2 cup celery -- chopped
1 clove garlic -- minced
3/4 cup chili sauce
3/4 cup water
1 medium sliced green pepper -- optional
Mix first three ingredients, rub into both sides of the
round steak or pound into
meat with a meat mallet or
edge of dish. Cut into patties.
Peel and slice onions. Preheat skillet and add 1/2
shortening. Brown steak on both sides.
Reduce heat. Add celery, garlic, chili sauce, and water.
Cover and simmer 1 hour.
Cut green pepper into thin slices. Add onions and green
pepper to meat.
Continue cooking for 30 minutes more
until meat is tender.
