Spicy Honey-Glazed Bacon


Who knew that you could improve upon already sinful bacon? This inspired idea by Grace Parisi appeared in Food & Wine magazine. You'll get better results if you get bacon cut at the deli counter instead of using the packaged version.

1 lb (450 g) thick-cut bacon
2 tbsp honey
1/4 tsp ground coriander
1/8 tsp ground cayenne
1 tbsp sesame seeds

Arrange bacon over parchment-lined baking sheet or sheets in single layer.

In small skillet, combine honey, coriander and cayenne. Cook, stirring constantly, over high heat 1 minute. Brush over top side of bacon. Bake in preheated 375F oven 10 minutes. Sprinkle bacon with sesame seeds. Bake 5 to 10 minutes, depending on thickness and fattiness of bacon, until sizzling and browned.

Transfer bacon to paper towel-lined rack, glazed side up, to cool slightly.

(Bacon will get more crisp as it cools.)
