Sesame Pecan Chicken Tenders with Apricot Dipping Sauce
2 egg whites
1/3 cup sesame seeds
3 tbsps finely chopped pecans
vegetable oil for frying
1 Lb skinless, boneless chicken breast, cut into thin
strips
Sweet and Spicy dipping Sauce (recipe follows)
Beat the egg whites in a small bowl until frothy, and
set aside. Combine the sesame seeds and pecans in a
small bowl, and set aside.In a large heavy skillet, heat
3" of oil over medium heat, until the oil reaches 350°.
Dip the chicken strips into the egg whites and then into
the nut mixture. Carefully place a few strips in the hot
oil and fry about 3 minutes, until golden brown. Drain
on paper towels. Repeat with the remaining strips. Serve
with dipping sauce.
Sweet and Spicy Dipping Sauce
2 tbsps hoisin sauce
1 tsp Dijon Mustard
1/4 cup Apricot preserves
Combine the hoisin sauce, mustard, and preserves in a
small bowl and stir well to combine.
Serve with the chicken tenders.
