Apricot Lime Pork Chops
4 pork loin chops
Salt and pepper to taste
1 tbsp. butter
1/2 cup apricot jam
1/4 cup ReaLime Lime Juice
1 tbsp. chopped fresh rosemary
Rinse pork and pat dry; sprinkle with salt and pepper.
Melt butter in a large skillet. Cook pork over medium
heat for 8 to 10 minutes per side or until pork reaches
an internal temperature of 145°F. Stir together jam and
lime juice and pour into skillet. Cook for 5 minutes
more or until pork is nicely glazed. Sprinkle with
rosemary.
Makes 4 servings.
