Jambalaya
4 cups chicken broth
15 ounces tomatoes, canned
6 stalks celery -- large chop
1/2 whole red onion -- large chop
1 tablespoon garlic -- minced
1 tablespoon hot sauce -- or to taste
3/4 pound chicken breast -- skinless, boneless
3/4 pound Polish sausage links -- cut into chunks
16 ounces red bell pepper -- chopped
16 ounces cauliflower -- steamed
16 ounces shrimp
1 tablespoon olive oil
Sour cream garnish
Place olive oil into large skillet and get it hot. Add
veggies and sauté. Add to crock-pot. Add hot sauce and
chicken. Place chicken broth and tomatoes in crock pot
and set on low. Cook on LOW for 7-8 hours. Add browned
sausage links and shrimp. Let cook another 20 minutes or
until meat is hot. Steam cauliflower in a bit of water
in the microwave for 8 minutes. Place some crushed
cauliflower into the bottom of each bowl, ladle in the
soup and place a nice large dollop of sour cream into
the center.
Pass the hot sauce. This makes a huge serving! So for
you small eaters, It is only 4.5 grams for ˝ serving.
The veggies were still a little crunchy which was nice.
13 grams carb minus 4 grams fiber= 9 grams per bowl
