Grilled Pineapple with Coconut Ice Cream

1 ripe pineapple - peeled, cored
1/2 stick unsalted butter
6 packets sugar substitute
1 teaspoon ground cinnamon
vanilla-coconut ice cream

Prepare a medium grill. Cut pineapple into 1-inch thick rings. In a small saucepan or microwave safe bowl, melt butter. Mix in sugar substitute and cinnamon. Brush pineapple rings with mixture. Grill pineapple rings 5 to 7 minutes per side until nicely browned. Add vanilla-coconut ice cream.
