Crab Meat And Mushroom Omelet

2 TBSP Butter
6 shiitake mushrooms thinly sliced
2 TBSP white onions, chopped
1/2 cup lump crabmeat
1 TBSP sherry
6 eggs
3 TBSP heavy cream

Melt butter in nonstick skillet add mushrooms, and onions, and sauté till light brown. Stir in crabmeat Simmer for 3 minutes, add sherry and simmer 1 minute more. Set aside half of this mixture. Beat eggs and cream and pour carefully over the crabmeat mixture in pan, cook till set. Place remaining mixture over the top of the omelet after it has been folded.
