Pumpkin Cheese Cake
8 oz. cream cheese (softened)
1/4 cup white sugar
2-1/2 teaspoon vanilla
1 egg
Mix with mixer until smooth.
Spread evenly over bottom of unbaked pie crust.
Filling:
1/2 cup white sugar
1-1/4 cups pumpkin
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
dash of salt
1 cup heavy cream
2 slightly beaten eggs
Mix until smooth. Carefully pour over cream cheese
mixture, beginning from the outside. Bake at 350 degrees
for approximately 1 hour and 5 minutes, or until knife
in center comes out clean.
