Winter Fruit Medley
Fruit:
2 cups seedless green grapes
2 cups seedless red grapes
1 (20-ounce) can pineapple chunks in juice, drained,
reserve juice
1 (11-ounce) can mandarin orange segments, drained,
reserve juice
2 medium bananas, sliced 1/2-inch
Dressing:
1/3 cup granulated sugar
1 tablespoon cornstarch
3/4 cup reserved pineapple and orange juices
1 teaspoon lemon juice
Place all fruit in large bowl. Set aside. Combine sugar
and cornstarch in 1-quart saucepan; gradually stir in
reserved 3/4 cup fruit juices and lemon juice. Cook over
medium-high heat, stirring occasionally, until mixture
comes to full boil (5 to 7 minutes). Continue boiling,
stirring constantly, 1 minute. Remove from heat; let
stand 5 minutes. Pour dressing over fruit; toss gently
to coat. Cover; refrigerate at least 30 minutes. Makes 6
(1 1/4-cup) servings.
