Orange-Vidalia Sweet Onion Salad
6 oranges, sliced or chunked
2 to 3 tablespoons honey
2 medium Vidalia onions, sliced
1/2 clove garlic, crushed (may sauté in oil to soften)
1 tablespoon celery seed
6 tablespoons olive oil
1 tablespoon basil
3 tablespoons apple cider vinegar
1 teaspoon oregano
Mixed salad greens
For dressing mix oil, cider vinegar, honey, garlic,
celery seed, basil and oregano together. Pour over
oranges and onions and mix well. Chill. Serve on mixed
salad greens. Makes 6 servings.
Note: Blueberries, raspberries or melons can also
be eaten with Vidalia's in a salad using the same
dressing.
