Spicy Chinese Noodles


1-12 oz. pkg. Chinese noodles, fresh
1/2 cup smooth peanut butter
1 Tbsp fresh grated ginger
1 1/2 Tbsp white vinegar
2 Tbsp soy sauce
1/2 cup chicken broth
1/2-1 tsp Asian hot chili oil
1 bunch green onions, chopped
1 med. cucumber, peeled, seeded and chopped
2 Tbsp chopped peanuts

Cook noodles according to package directions. In a medium saucepan, combine peanut butter, ginger, vinegar, soy sauce, chicken broth and hot chili oil. Heat and cook until thick. Stir in onions, cucumber and peanuts. Pour over noodles; mix and serve. For a one-dish meal, stir in left over beef roast, pork roast, grilled chicken or shrimp.
