Ever Shepherds Pie
1lb ground beef, cooked & drained
1 large onion, chopped
1 tbsp crushed garlic
salt & pepper to taste
1-14oz can niblet corn or baby peas (I do the peas)
**1/2 to 1 cup instant beef gravy (jarred or whatever
you have) to moisten well but not runny
Two-Potatoe Mash, cooled (recipe follows)
Preheat oven to 350*
Mix the cooked beef with the next 5 ingredients. Pour
into a greased casserole dish. Top with Two-Potatoe Mash
making sure you cover to the sides. Bake at 350* 30-35
minutes or till you see it bubbling & cooked through. If
you have extra beef, serve on the side to pour over pie.
Fresh rolls & another vegetable go very well with this
dish.
Two-Potato Mash
4 medium potatoes
2 small sweet potatoes
1 cup Milk
1 cup grated Cheddar cheese
1/2 cup sour cream
2 tbsp chopped green onion
1 tsp salt (or to taste)
Pinch nutmeg
Peel and quarter regular potatoes. Peel and cut sweet
potatoes into eighths. In large saucepan, cover regular
potatoes with cold water; bring to boil and cook for 5
min. Add sweet potatoes; cook another 15 min or until
fork-tender. Drain; return to low heat for 3 min to dry,
shaking pan occasionally. Mash potatoes until smooth.
Continue mashing while gradually adding Milk. Stir in
Cheddar cheese, sour cream, onion, salt and nutmeg.
**NOTE: If you don't have a beef gravy on hand, you
can use a 14oz can of Creamed Corn instead of the niblet
corn & I would still add the peas.
