Wild
Rice Stuffing
Serves 8-10
1/2 lb lean bacon
1-1/2 cups wild raw rice
3 cups chicken broth
1 lge onion, chopped
1/2 cup unsalted butter
1-1/2 cups fresh raw cranberries, chopped coarsely
1/3 cup heavy corn syrup
1 tbsp chopped fresh rosemary
salt & pepper to taste
Cook bacon until crisp, drain & crumble. Set aside. Wash
the rice well. Place it in a saucepan with the chicken
broth, bring to a boil & lower heat & simmer for 30
minutes: until the liquid is absorbed & the rice is
tender. In another large saucepan, melt the butter&
sauté the onions until golden. Add the cooked rice,
cranberries, syrup, rosemary, salt & pepper: cook for
another 10 minutes. Remove from the heat & stir in the
bacon. Refrigerate the stuffing until time to cook the
turkey. Stuff the cavities loosely so dressing can
expand.
