Honey Christmas Cookies


1/3 cup margarine
2 Tbsp. honey
1 tsp. finely shredded lemon
peel
3/4 cup ground almonds
whole almonds or red cinnamon
candies (optional)
1/4 cup sugar
1 tsp. vanilla
1 1/4 cup all-purpose flour
colored sugar (optional)

In large mixer bowl beat margarine with electric mixer
on medium 30 seconds. Add sugar, honey, vanilla and lemon
peel; beat well. Add flour, beat well. Stir in ground
almonds. Shape into 1-inch balls; place 2 inches apart on an
ungreased cookie sheet. Using the bottom of a glass dipped in
colored sugar or a cookie stamp dipped in flour, flatten
cookies to 1/4-inch thick. Press whole almonds or cinnamon
candies into cookies. Bake at 325 degrees for 8 to 9 minutes or until
golden. Let cool on cookie sheet for 1 minute. Remove from
cookie sheet; cool on wire rack.
