Herb-Barbeque Turkey
Makes 12-16 servings.
12-16 lb turkey
1 onion
1 celery stalk
2 tbsp each: fresh lemon juice & olive oil
2 tsp dried thyme
1/2 tsp dried rosemary
Preheat BBQ to medium heat. For ultimate ease use a
disposable foil pan. Remove neck & giblets from turkey.
Rinse turkey under cold water & pat dry. Place onion &
celery in cavity. Squeeze lemon juice on outside of
bird. Sprinkle evenly with oil, thyme & rosemary. Pour
about 1/2" of water in bottom of pan. Place rack in pan,
place bird on rack breast side up & cover with 2 layers
of foil tucked loosely in. Place on BBQ grill & shut
lid. Cook for 2- 2-1/2 hours replenishing the water if
necessary until meat thermometer registers 170F. remove
from pan & let stand 15 minutes before carving.
