Cream Gravy

1/4 cup pan drippings
1/4 cup flour
2-1/2 tp 3 cups hot milk
1/2 tsp salt
1/8 to 1/4 tsp pepper

Pour off all but 1/4 cup drippings from the pan; place pan over medium heat. Add flour & stir till brown. Gradually add hot milk, cook stirring constantly until thick & bubbly. Stir in salt & pepper.
