Christmas Rounds
1 Package instant vanilla pudding mix (3 3/4 oz.)
2 Cups commercial dairy eggnog
1 Cup whipping cream
3/4 Cup finely chopped red and green candied cherries
1/2 Cup finely chopped, toasted almonds
Prepare pudding mix according to package directions,
except use eggnog in place of milk. Whip the cream and
fold into pudding mixture along with the cherries. Turn
mixture into two 16-ounce empty fruit or vegetable cans.
Cover with plastic wrap or foil and freeze several hours
or overnight. To un-mold, remove bottoms of cans with
can opener and push logs through. Roll logs in toasted
almonds. Let stand at room temperature about 10 minutes
and cut each log into 5 slices and serve.
