Christmas Morning Coffee Cake

Buy a 9" or 10" round glass dish suitable for microvaving. Add coffee cake batter (to be refrigerated and microwaved the following morning), or add a bag of ingredients along with nuts and raisins for easy mixing. Attach the recipe and tie the gift with colored cellophane and a nice bow.

Make the batter and deliver the gift to a neighbor Christmas Eve, to refrigerate and cook the next day. Give the dish and ingredients to a new microwave owner or as a hostess gift. Or microwave the coffee cake for the annual family Christmas breakfast.

1/3 cup butter
1/2 cup granulated sugar
1/4 cup brown sugar
1 egg
1 cup all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 cup sour cream
1/3 cup chopped nuts
1/2 cup golden raisins

Topping
1/4 cup brown sugar
1/4 tsp cinnamon

CREAM together butter, sugars and egg. Stir together flour, soda, salt, cinnamon and nutmeg.

STIR in half the flour mixture, then half the sour cream, beating the mix well. Add remaining flour mixture, then sour cream. Fold in nuts and raisins.

SPREAD in greased 9" round glass baking dish. Mix topping ingredients; sprinkle over batter. Cover and refrigerate overnight.

MICROWAVE, uncovered, at HIGH 8 minutes, turning if necessary, until moisture disappears on top and cake tester inserted in several places comes out clean. Let stand 5 minutes.
