Christmas Morning Breakfast Tacos
1 med Potato, boiled, diced or grated
4 slices Bacon
4 Eggs, lightly beaten
4 Flour tortilla
Cook bacon until just getting crispy. Remove and drain
well. Place potato in the pan, and cook, turning
occasionally, until well browned and crispy. Cut bacon
into 1 inch pieces, and add to potatoes. Immediately
pour eggs over the potato/bacon mixture, and cook,
stirring frequently, until firm. Spoon mixture into
heated flour tortillas; roll up and serve.
