Candy Canes
1/4 tsp. cream of tartar
1/2 Cup light corn syrup
1/2 Cup water
3/4 tsp. peppermint extract
1 tsp. red food coloring
2 Cups sugar
Mix together cream of tartar, corn syrup, water and
sugar. Stir over medium heat until sugar dissolves. Cook
to 265 degrees (very hard ball stage). Remove from heat
and add the peppermint. Divide the mixture in half and
add food coloring to one part. Pour on greased cookie
sheets. Pull each apart separately into ropes. Twist red
part around white. Cut into 8-inch lengths. Form into
candy canes.
