Angels Wings
10 egg yolks
1 tablespoon baking powder
3 tablespoons sugar
pinch of salt
1 jigger of cognac
2 to 2-1/2 cup all-purpose flour
vegetable oil for frying
vanilla powdered sugar
Beat egg yolks until thick and lemon colored. Add baking
powder, sugar, salt, and cognac.
Gradually add flour until a smooth batter is reached,
continue to add flour and knead until smooth and
elastic. Dough should be soft. Divide dough into 3
sections, cover with a bowl, and let rest 15-20 minutes.
Roll out dough on a lightly floured surface until 1/8"
in thickness. Cut thin strips of dough 3" x 1". Gently
wrap dough around the end of a wooden spoon and place in
hot oil. Fry until golden on both sides. Drain on paper
towels. Sprinkle heavily with powdered sugar. Makes
about 3 dozen
