Raisin Apple Flapjacks
Serves 4 (twelve 4- to 5-inch pancakes)
3 egg whites
1 cup fat free (skim) milk
2 cups reduced-fat buttermilk baking mix
1 Granny smith apple, peeled, cored,
and coarsely chopped
1/2 cup raisins
1/2 teaspoon nutmeg
In large bowl, whisk egg whites until foamy; whisk in
milk, then stir in baking mix. Add apple, raisins, and
nutmeg, mixing just until blended (do not over mix).
Heat griddle or heavy skillet over medium-high heat;
coat with vegetable oil cooking spray. Pour batter, 1/4
cup at a time, on to griddle. Cook, turning once, until
browned on both sides. Serve hot with maple syrup.
